Carolyn M. Lassiter, age 76, of Knoxville, Tennessee, passed away peacefully on Sunday, December 28, 2025.
Carolyn was born on December 18, 1949. She found her greatest joy in her family and cherished the time she spent traveling and making memories with those she loved most. She especially loved cooking for her family and bringing everyone together around the table.
Carolyn was a devoted mother and grandmother who deeply loved her grandchildren, Austin, Thomas, and Eli, the sons of her late son, Jeremy Mintz. Her life was shaped by both deep love and loss, including the untimely passing of Jeremy in 2022, which she endured with quiet strength and grace.
She is survived by her son, Holland Ricker (Shelley); her brothers, Phillip Maples (Janice) and Gilbert Maples (Sara); her daughter-in-law, Susan Mintz; and her beloved grandchildren, Austin, Thomas, and Eli. She was preceded in death by her parents, Ruble and Clydia Maples, and her son, Jeremy Mintz.
Family and friends are invited to attend visitation on Friday, January 2, 2026, from 5:00 p.m. to 7:00 p.m. at Mynatt Funeral Home Halls Chapel.
A graveside service will take place at 11:00 a.m. on Saturday, January 3, 2026, at Greenwood Cemetery, 3500 Tazewell Pike, Knoxville, Tennessee. Fond memories and expressions of sympathy may be shared at www.mynattfh.com
