Carole Mynatt Mitchell

Carole Mynatt Huffman Harrell Mitchell, of Knoxville, Tennessee, went home to be with her Lord and Savior Jesus Christ on May 21, 2026. She entered eternity with the same quiet strength, faith, and grace that carried her throughout her life.

Carole was retired from the United States Postal Service, where she served her community with dedication and reliability. Her life was marked by resilience, devotion to family, and a deep and abiding faith that guided her through every season.

She was preceded in death by her parents, mother Dorethea Stanley and father Clarence Mynatt; her grandparents, Mr. and Mrs. A.A. Ruckart and Oliver Swan and Martha Mynatt; her husbands, Wendell David Harrell and William Mitchell; her adored granddaughter, Mandy Harrell; her sister, Denise Kincaid; and her son-in-law, Calvin Jones.

Carole is survived by her beloved children: Elizabeth “Beth” Jones; Rebecca “Becky” Shreve and her husband Wayne; Jerry Edward Huffman II and Jacque; and Tina Marie Carpenter and her husband Greg Carpenter. She is also survived by her stepchildren David, Betsy, Susan, and Karen.

She leaves behind her siblings Gary Stanley, Vickie Stanley, and Brenda Kelly, who will forever cherish her memory.

Carole is further survived by a large and loving family of grandchildren, Michael and wife Stacie; Misty and husband David; Doug and wife Laurah; Craig; Laura; Jennifer and husband Andrew; Matthew and wife Caroline; Tabitha and wife Felix; Donnie; Ciara; and Nicholas, great grandchildren, Cara, Grant, Clayton, Liam, Bryson, Ashton, William, Hannah, Peter, Wesley, Roman, Faye, River, Irelyn, Haevyn, Alorah, and Brady, as well as her great-great granddaughter Jesse.

Her legacy lives on in the generations who follow her, in their laughter, their stories, and the love she poured into each of them. Carole’s family rejoices in knowing she is now at peace in the presence of her Savior.

Family will receive friends on May 26, 2026, from 10:00am - 12:00pm at Mynatt Funeral Home, Fountain City Chapel with a funeral service to follow officiated by Wayne Roach.
